A study by the Center for Biomedical Research in Red-Physiopathology of Obesity and Nutrition (CIBERobn) in collaboration with the Ingenio-Consolider (FunCFood) says red wine could protect against bowel disorders, inflammatory diseases, cancer and obesity, through the proper maintenance of the intestinal flora.</p>
<p>This is due to the presence of polyphenols, natural compounds in fruits, vegetables, wine, coffee, tea or chocolate and would have the power to help inhibit the non beneficial bacteria in the intestinal flora.<span id="more-1388"></span></p>
<p>This research was published in the American Journal of Clinical Nutrition and monitored a group of men for 20 days. In this time range the study compared the effects of wine, soft drinks and gin in the intestinal flora.</p>
<p>The conclusion? Red wine improves intestinal flora, increasing the number of bacteria related to the protection of certain diseases.</p>

<p><strong> Sauvignon Blanc</strong><br />
If there is something that Peruvians prepare extremely well is ceviche. But real ceviche: with corn, coconut milk, a croaker that was swimming less than 24 hours ago, with the tasty red onion chopped in small pieces and all adorned with chilli pepper. With this dish we need to reduce that delicious fire in our mouth. The best option is our Frontera Sauvignon Blanc: fruity, delicate, with good acidity and refreshing.<span id="more-1351"></span></p>
<p><strong>Pinot Grigio</strong><br />
One of the best qualities of the buffalo mozzarella is that it’s delicate, salty and kind of creamy. If you add some tasty and juicy tomatoes, fresh basil leaves and a touch of olive oil, we have only one possibility: Pinot Grigio. This wine is made for pairing it with a small salad, also called Caprese, which opens the way for the main course.</p>
<p><strong>Chardonnay</strong><br />
The contrasts are entertaining: peach with tuna and hard-boiled egg. What do you think? It&#8217;s strange perhaps, but delicious for sure. Tuna with boiled eggs and some cream -to make a paste-, is mounted in the canned peach, giving a salty, sweet, creamy and consistent mixture. With a base of green salad, this combination is refreshing and almost aphrodisiac. Which would be the perfect choice of wine? Obviously, Frontera Chardonnay, because of its creaminess, delicate fruit, acidity and medium structure.</p>
<p><strong>Rosé</strong><br />
Recently I was offered something: fresh strawberries with white chocolate. For this combination I had only one idea in mind: our Frontera Rosé. Thanks to its acidity it goes beautifully with strawberries. One of the best qualities of the white chocolate is that it isn’t so bitter, which helps the wine to express its aromas and smoothness.</p>
<p><strong>Moscato</strong><br />
In Chile we have a traditional dessert called &#8220;Mote con huesillos&#8221; (wheat grains with dried apricots, cooked in water with sugar and various spices). It’s sweet and refreshing, especially if you leave the cooked apricots macerating for three days in its own juice with some cinnamon sticks. At the time of eating, the freshness reminds me the delicious Frontera Moscato.</p>
<p><strong>Merlot</strong><br />
I love lasagna bolognese, but with some layers of white sauce. With this the lasagna might lose character, but definitely it becomes tastier and gently, so you can eat a second portion. Frontera Merlot is soft and velvety but with good acidity and tannins, and slightly sweet. This makes it a wine that one might want to repeat every day.</p>

			<content:encoded><![CDATA[<p><img src="http://www.fronterawines.com/wp-content/uploads/2012/03/carne-y-vino-OK.jpg" alt="carne-y-vino-OK" title="carne-y-vino-OK" width="266" height="205" class="alignright size-full wp-image-1347" />To every person who loves the experience of drinking a good glass of wine, the food you choose to accompany it is quite important. So we ask for some help from the sommelier of Frontera, Gabriel Salas, and he told us which are his favorite dishes to pair with each of our wines.</p>
<p>In this first article we’ll present the recommendations that Gabriel made for the following strains: Carmenere, Syrah, Malbec, Cabernet Sauvignon, Cabernet Blush and Late Harvest.</p>
<p>Stay tuned! Next week we will publish the pairings for Sauvignon Blanc, Pinot Grigio, Chardonnay, Rose, Merlot and Moscato.<span id="more-1344"></span></p>
<p><strong>Carmenere</strong><br />
“I must be honest: Corn pie is one of those dishes that just I can’t resist, to the point of scraping the pan of clay (or dish) to the maximum limit. It’s so delicious, varied, complete, salty and sweet, that I always want some more. Which is the right wine for it? Since 1994 there is no alternative in the world: Carmenere. Thanks to November 24, 1994 the exact day when Carmenere was rediscovered, we have a match made in Chile”.</p>
<p><strong>Syrah</strong></p>
<p>&#8220;For some time now, I’ve preferred pork ribs to beef. It’s much more tasty, especially if you are at a barbecue where the cook serves small amounts of meat in her perfect cooking point. </p>
<p>If you wait until the pork is well cooked and crispy, but not over-dry, the meat with hints of rosemary and oregano will be extremely tasty for the palate. As rosemary is an aromatic herb and pork ribs are fatty, our Syrah is wonderful, because of its unique personality that allows an everyway round experience&#8221;.</p>
<p><strong>Malbec</strong><br />
&#8220;If you really like meat and some times just want to eat a good steak or tenderloin without any accompaniment, even not a green salad, I recommend our Frontera Malbec.</p>
<p>There is nothing simpler than good juicy meat with a tasty red wine. The tannins of Malbec resist tremendously well the flavors of the meat.&#8221;</p>
<p><strong>Cabernet Sauvignon</strong><br />
&#8220;The shredded beef is by far one of the tastiest preparations in the meat world. It&#8217;s so tender and flavorful that goes well with all kinds of accompaniment. But my brother had a great idea, I invite you to try: shredded beef and cheese pie. Delicious! There is no better wine that Frontera Cabernet Sauvignon, with its juicy tannins, correct acidity and fresh fruit, just make sure everything is in perfect balance.&#8221;</p>
<p><strong>Cabernet Blush</strong><br />
&#8220;The best possible dessert is simply a mix of strawberries, banana, pineapple, peaches, apricots, grapes, oranges or other, all cut into small pieces and &#8220;seasoned&#8221; with palm honey. You can add crushed vanilla cookies over the fruit before serving, giving a crisp touch. If you want to make it even tastier you can add a scoop of lucuma ice cream. This calls for a sweet and refreshing wine. Nothing better than a Cabernet Blush!&#8221;</p>
<p><strong>Late Harvest</strong><br />
&#8220;I have spoken of contrasts. I think the best possible combination for this wine is a table with blue cheese, gruyere, ripe gouda, fresh goat cheese and prosciutto, accompanied by quince jelly and nuts. This combination is a delight especially if you accompany it with Dijon mustard and a French baguette. Simply add the music of Edith Piaf to feel like you&#8217;re in Paris, the most beautiful and romantic city in the world!&#8221;</p>

One of the qualities that stands out is the radical change Santiago experienced after the country overcome with optimism some dramatic events that suffered in 2010, as the 8.8 earthquake and the collapse in a mine which trapped underground 33 miners.</p>
<p>&#8220;Culture and sports have come to the fore and new museums have opened to acclaim,&#8221; announces Lonely Planet. The article also emphasizes the top-notch restaurants, the exciting nightlife and the upcoming “inauguration of the tallest building on the continent, the 70-storey Torre Gran Costanera”.<code></p>
<p>Another point that stands out is that Santiago de Chile allows a wide variety of excursions: “Day trippers can scale an Andean peak in summer, ski its powder-clad slopes in July, or cycle through the idyllic vineyards of the Casablanca, Maipo and Colchagua valleys”.<br />
Other cities in the top 10 list are London, Cadiz, Stockholm and Hong Kong.</p>

So, when we think in wines we are used to relate them to salty food. But did you know that desserts are also a great combination for wine?</p>
<p>Not just any dessert can be paired with any type of wine: Sweet wines are needed and in Frontera we have two ideal alternatives for desserts.</p>
<p><strong>Cabernet Blush</strong><br />
This pale and bright wine has the characteristic of being sweet, but not cloying, because it doesn’t have much residual sugar. &#8220;It’s quite refreshing, with a good degree of sugar and has a likeable color,&#8221; says Gabriel Salas, sommelier of Concha y Toro.<span id="more-1281"></span></p>
<p>The perfect combination for this wine is a fruits and ice cream dessert, something easy to find worldwide and that gives multiple flavors options. Other excellent choices could be a cheesecake with raspberry or strawberry sauce, which would provide acidity, or also a milk-based dessert.</p>
<p><strong>Late Harvest</strong><br />
In comparison to Cabernet Blush, this wine is known for being even sweeter. So if you&#8217;re a fan of napoleon cake, this is an excellent option, as long as you add a touch of acidity to the cake through a sauce.</p>
<p>If you really love sweet food, then you must try a glass of Late Harvest served with a custard dessert. You’ll not regret it!</p>
